Cinnamon Baked Sweet Potato Fries

Serves: 6 portions
Ingredients
  • 5 Sweet Potatoes (About 1.2kg)
  • 3 heaped tbsp coconut oil (or about 4-5 tbsp melted coconut oil)
  • 1 tsp cinnamon
  • ¾ tsp salt
Instructions
  1. Preheat the oven to 225 degrees celcius
  2. Line a large baking tray with baking paper
  3. Wash and peel the sweet potatos
  4. Cut in preferred size or just under 1cm thick and place in tray
  5. Sprinkle with salt & cinnamon
  6. Add coconut oil and mix around to spread evenly
  7. Place in the oven on the middle rack for 25 mins
  8. After 25 mins, give the sweet potato a gentle flip and return to the oven for another 15 mins
  9. Flip the sweet potato again and return to the oven for another 10 mins
  10. At this stage, check the sweet potato regularly if you notice some are burning, all ovens can vary and you can check them every 5 mins
  11. The baking paper will ensure they don't stick to your tray but will enable them to crisp up
