Roasted Chilli and Turmeric Brussel Sprouts

Serves: 4 as a side dish
Ingredients
  • 500gm Brussel Sprouts
  • 1 large piece of fresh turmeric (about 8cm long) or 1 tsp powdered turmeric
  • 1 tbsp ghee
  • 1 tsp cayenne pepper (or adjust to desired heat)
  • 1 tsp sea salt
Instructions
  1. Preheat the oven (with top element on) to 225c
  2. Wash, trim and halve the brussel sprouts
  3. Place in a large baking tray
  4. Peel and thinly slice the turmeric or sprinkle powdered turmeric over the brussel sprouts
  5. Sprinkle the cayenne pepper and salt
  6. Give the tray a good shake / stir around
  7. Place small dollops of the ghee around the tray
  8. Place in the oven for 20 mins
  9. Check and stir the brussel sprouts around, and set the timer for another 10 mins
  10. Check and stir the brussel sprouts again, they should be browing really nicely
  11. Adjust the remaining time if necessary or set the timer for another 10 mins and ensure they do not burn!
  12. Serve hot or cold
