Herbie Spiced Rolled Eggs
Serves: 6 eggs (for 2-3 people)
- 6 free range eggs
- 3 tbsp toasted sesame
- 1 tbsp sumac
- 1 tbsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cayenne (reduce or replace with paprika to reduce spice/heat)
- 1 tsp chilli flakes (optional)
- 1 tsp salt
- A bunch of salady things (whatever herbs, salads or veggies you have on hand)
- Preferred dressing (I use some EVOO & balsamic vinegar or ACV)
- Boil the eggs to your liking
- Lightly toast 3 tbsp of sesame until golden brown, set aside
- Place remaining herbs and spices in a grinder (like a magic bullet) and grind until mixed together
- In a bowl, add the ground herbs & spices with the toasted sesame seeds
- Peel eggs, and gently roll in the mixture
- Divde the washed salad & fresh herbs on 2-3 plates, sprinkle salad (herbs or veggies) with remaining spice mix then drizzle with dressing
