Herbie Spiced Rolled Eggs

Serves: 6 eggs (for 2-3 people)
Ingredients
  • 6 free range eggs
  • 3 tbsp toasted sesame
  • 1 tbsp sumac
  • 1 tbsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cayenne (reduce or replace with paprika to reduce spice/heat)
  • 1 tsp chilli flakes (optional)
  • 1 tsp salt
  • A bunch of salady things (whatever herbs, salads or veggies you have on hand)
  • Preferred dressing (I use some EVOO & balsamic vinegar or ACV)
Instructions
  1. Boil the eggs to your liking
  2. Lightly toast 3 tbsp of sesame until golden brown, set aside
  3. Place remaining herbs and spices in a grinder (like a magic bullet) and grind until mixed together
  4. In a bowl, add the ground herbs & spices with the toasted sesame seeds
  5. Peel eggs, and gently roll in the mixture
  6. Divde the washed salad & fresh herbs on 2-3 plates, sprinkle salad (herbs or veggies) with remaining spice mix then drizzle with dressing
