Pear, Walnut and Blue Cheese Salad

Serves: 4-6 as a side
Ingredients
  • 2 small heads of butter lettuce (rocket is also great)
  • 1 firm packham pear
  • 50gm blue cheese (leave out if you can't have cheese and add some extra nuts or seeds)
  • Handful of walnuts (buy on iherb or amazon)
  • Sea salt (buy on iherb or amazon)
  • Olive oil
  • Apple cider vinegar (buy on iherb or amazon) or lemon juice or balsamic vinegar
Instructions
  1. Wash and spin dry lettuce, place on serving bowl
  2. Thinly slice pear lengthways using a mandolin, lightly mixed through lettuce
  3. Crumble or slice the blue cheese and scatter over salad
  4. Scatter the walnuts over the salad
  5. Sprinkle about ½ tsp sea salt, then drizzle about 2 tbsp extra virgin olive oil and 1 tbsp of vinegar or lemon juice.
  6. Toss lightly, taste and adjust if required.
