Scoop the cream from the top of a chilled coconut milk can (careful to not get any coconut water - reserve the water and remaining cream sitting directly on top of the water for other uses like smoothies, batters, omelettes)
Whip the coconut cream with the coconut sugar & cinnamon, taste to your preference for sweetness
Slice the bananas lengthways
Spread one side of the bananas with almond butter and sprinkle with some sea salt flakes
Spread the other side of the bananas with the whipped coconut cream
Sprinkle the cacao nibs over the top (if using, highly recommend it!)
Sandwich together, and freeze for a few hours until hard
Remove from the freezer and cut into bite size pieces
Store in the freezer, should last a few weeks (if you don't eat them all at once!)
