 
			Quick Pink Apple Slaw
I love all types of slaws, quick and easy to put together without too many ingredients. This is a refreshing version without the usual creamy dressing. Shredded apples give this crunchy slaw a lovely sweetness and the purple cabbage turns it all into a pretty pink. This slaw would go well as a side dish to any barbecue or feast 🙂

| Quick Pink Apple Slaw | 
Makes 4 side servings
Prep Time: 10 minutes
You will need:
- 1 apple (I used gala)
- 1 cup shredded purple (or white) cabbage
- 3 radish thinly sliced
- 1 cucumber thinly sliced
- 1 spring onion thinly sliced
- 2 tbsp extra virgin olive oil
- juice of 1/2 to 1 lime
- good pinch of salt (buy on iherb or amazon)
- optional 1/3 cup of fermented shredded carrots

Method:
- In a large mixing bowl, combine all the shredded and sliced veggies (I used a mandolin to shred and slice)
- drizzle over the olive oil and lime juice
- add salt
- toss gently and check to adjust seasoning
- serve immediately
