Spiced Pancakes – Grain Free and Dairy Free

I’m missing the Easter celebrations back home as it isn’t celebrated over here and mostly, I’m missing the smell of hot cross buns! but… I’m too lazy to bake so I just made these hot cross bun inspired spiced pancakes. They are grain, dairy, nut and sugar free – perfect for school lunch boxes and really simple to make. So if you want to fill your kitchen up with real Easter bun aromas in the morning without the hassle of beating, kneading and baking dough, here you go! 🙂

The base of this pancake is my 2 ingredient sugar banana pancake recipe (see here) with the addition of shredded coconut, raisins, spices and orange rind. I’m really happy with how they turned out as my middle child did not like the original 2 ingredient sugar banana pancakes, but with the aromatic additions he loves them!

These pancakes work best with the sugar bananas (known as Ducasse) found in most Asian markets and grocers, they can work with the Cavendish bananas if that is all you can find, although it would still be ok, just less thick and fluffy.

SPICED PANCAKES – GRAIN FREE AND DAIRY FREE

Makes 16 pancakes (2 inch diameter)
Prep Time: 2 mins
Cook Time: 10 mins (depending how many you can fit in your pan)
You will need:
  • 2 Sugar bananas (just ripe works best, that is yellow with no black spots)
  • 2 eggs
  • 2 tbsp shredded coconut (buy on iherb or amazon)
  • 1 tbsp raisins (sultanas)
  • 1 tsp vanilla extract (buy on iherb or amazon)
  • 1/2 tsp orange rind
  • 1/4 tsp cinnamon (buy on iherb or amazon)
  • 1/4 tsp ground ginger (buy on iherb or amazon)
  • 1/8th tsp ground cloves (or 2 whole cloves) (buy on iherb or amazon)
  • 1/8th tsp ground nutmeg (buy on iherb or amazon)
  • coconut oil (buy on iherb or amazon)
Method:
  • Place your pan on medium low heat with 1 tbsp coconut oil, it should be low enough that the pan or oil will not sizzle or smoke while you prepare the batter (I use setting 6 out of 9 on my electric stove)
  • Slightly mash the bananas then place in blender or magic bullet (buy on amazon) with all the ingredients EXCEPT the raisins and coconut oil

place all the ingredients except raisins and coconut oil in blender
  • Blend to a smooth batter
  • Add raisins and mix well
  • Increase the heat slightly (my electric stove would be on a 7 out of 9)
  • Spoon 1 tbsp of mixture at a time in the pan, filling up the pan (I fit about 7 in my pan)
  • Cook for 1 minute, checking by lifting the sides of the pancake for browning
  • flip and cook for another 30 seconds to a minute until golden brown
  • repeat until mixture is finished, adding 1 tbsp of coconut oil each time you cook a new batch in the pan
  • Serve with a sprinkling of shredded coconut, they keep well for the day in a container and are great to send to school for snack time too!
