Arriving as a Vietnamese refugee and immersed in the many cultures that gathered around in the suburbs meant we travelled the world in one day with our palates.

We’re celebrating at home with the Southern Vietnamese classic New Years tradition with Claypot Braised Pork & Eggs  Thα»‹t kho, it sits on the stove while we feast from the pot over the next few days getting better each day.

The fully charged life force found in a sprouted coconut helps boost energy and the immune system. 

Along with many other benefits being easily digestabke increases the bioavailability of nutrients including healthy fats and electrolytes. 

Coconuts are the only other natural source of monolaurin, a precursor to lauric acid which has antiviral properties, the other being human breast milk making coconuts equivalent to another Earths breasts 😍🌴πŸ₯₯

The sweet hydrating flesh of the spongy sprouted coconut is often eaten on its own as a snack, sliced into salads or shredded into desserts.

Fermenting and preserving our excess produce on th Fermenting and preserving our excess produce on the farm with whole Tokyo turnips, baby carrots, beets, freshly sliced turmeric & dill πŸ₯•

I used 1.5 tbsp Celtic salt per kg vegetables, 1.5 tbsp black and yellow mustard seeds each, 1/2 bunch of dill & 3 pieces of fresh turmeric sliced 😍 cannot wait to eat these probiotic nutrient packed veggies. They’ll sit on my counter until we’re ready to eat them πŸ˜‹
