Angel Hair Zoodles with Truffle Oil – Only 3 ingredients
I went to a lovely pot luck lunch over the weekend and got to taste an incredibly delicious pasta dish (yes I ate some pasta!) made by my friend Audrey. I couldn’t get over how deliciously simple it was to make, with only 3 ingredients needed I popped by the store and quickly picked up some truffle oil, zucchini & caviar to make a grain free version. Wow, five minutes later, I had my angel hair zoodles with truffle oil plated up and ready to eat.
I really recommend a vegetable spiraliser like this one for this recipe as it is much nicer to crunch on the delicate thin strands of zucchini but if you don’t have one, a mandolin would also work.
Angel Hair Zoodles with Truffle Oil recipe
- 1 large zucchini (I used half a yellow and half a green zucchini)
- 1 tbsp truffle oil (or olive oil if you have truffle salt on hand already)
- 2 tsp caviar (check the labels or use black sesame seeds)
- pinch of salt
- Spiralize the zucchini using the fine angel hair setting, place in a medium bowl
- Add the truffle oil, caviar and salt
- Using light fingers or tongs, gently toss to ensure the zoodles are coated evenly
- Plate and serve immediately
