Frozen Salty Nutty Banana Bite Sandwiches

I posted these last year on my Instagram account, one of our favourite snacks for the kiddies to store in the freezer, especially during the summer time.

They are delicious fresh as well if you cannot wait to freeze them, but worth the wait frozen. The combination of sweet, salty & nutty and the crunch of cacao nibs. Yum!

Frozen Salty Nutty Banana Bite Sandwiches

You will need:

Method:
  • Scoop the cream from the top of a chilled coconut milk can (careful to not get any coconut water – reserve the water and remaining cream sitting directly on top of the water for other uses like smoothies, batters, omelettes)
  • Whip the coconut cream with the coconut sugar & cinnamon, taste to your preference for sweetness
  • Slice the bananas lengthways
  • Spread one side of the bananas with almond butter and sprinkle with some sea salt flakes
  • Spread the other side of the bananas with the whipped coconut cream
  • Sprinkle the cacao nibs over the top (if using, highly recommend it!)
  • Sandwich together, and freeze for a few hours until hard
  • Remove from the freezer and cut into bite size pieces
  • Store in the freezer, should last a few weeks (if you don’t eat them all at once!)

  • Cream from the top of a chilled coconut milk can
  • 1-2 tsp coconut sugar (or sweetener of choice)
  • 1tsp cinnamon
  • Unsweetened Cacao nibs (optional)
