Lemon Chia Seed Gummy Squares

This gummy recipe is super easy to make and quite refreshing with freshly squeezed lemon juce for flavouring. Chia seeds are packed with nutrients, high in Omega 3’s and can help reduce blood sugar spikes with their gelatinous coating to name a few benefits. Combined with gut healing gelatin, this makes a very simple nutrient dense & nourishing treat.

Lemon Chia Seed Gummy Squares

You will need:

2 tbsp chia seeds
About 2 cups coconut water
1 tbsp sweetener of choice (natvia or honey works well, I like coconut sugar but it will darken the mixture)
1 freshly squeezed lemon juice
2 tbsp gelatin (I useΒ Great Lakes)
Method:
  • Soak chia seeds in the coconut water overnight
  • After the seeds have soaked, add coconut sugar, lemon juice in a saucepan and gently sprinkle in the gelatin to avoid lumps
  • Place on low heat and stir continuously until the gelatin & coconut sugar dissolves
  • Taste the mixture and adjust if needed (more sweetener or lemon juice)
  • Pour into a glass pyrex dish or any rectangle dish is fine (I used a 2.6L dish)
  • Put in the fridge until set (at least 2 hrs)
  • Once set, remove the chia gummy and slice into even squares (I use a knife and run it along the edges then gently lift it up in one piece)
  • Store in a container in the fridge for a couple of weeks
