Cinnamon Baked Sweet Potato Fries

On most weekends, soon after getting up, I usually bake a big batch Sweet Potato fries which I leave out all day for us to graze on. Some days I like to vary it up with different spices, the simple addition of Cinnamon goes so well with the Sweet Potato. I preheat the oven while I chop and prepare the sweet potato, then pop it in, set the timer and go about the morning.

Cinnamon Baked Sweet Potato Fries in Coconut Oil

This recipe makes a very large tray (I have a big family to feed!), feel free to reduce it to suit your family size.

Makes approximately 6 portions

Cook Time: 50mins

Sweet Potatoes

You will need:

  • 5 Sweet Potatoes (About 1.2kg)
  • 3 heaped tbsp coconut oil (or about 4-5 tbsp melted coconut oil)
  • 1 tsp cinnamon
  • 3/4 tsp salt
Baked Sweet Potato Fries
Method:
  • Preheat the oven to 225 degrees celcius
  • Line a large baking tray with baking paper
  • Wash and peel the sweet potatos
  • Cut in preferred size or just under 1cm thick and place in tray
  • Sprinkle with salt & cinnamon
  • Add coconut oil and mix around to spread evenly
  • Place in the oven on the middle rack for 25 mins
  • After 25 mins, give the sweet potato a gentle flip and return to the oven for another 15 mins
  • Flip the sweet potato again and return to the oven for another 10 mins
  • At this stage, check the sweet potato regularly if you notice some are burning, all ovens can vary and you can check them every 5 mins
  • The baking paper will ensure they don’t stick to your tray but will enable them to crisp up
